Sometimes simple is just best

Hey hey hey! 

Well guess I’ll get this lil’ rant over first thing, kapeesh? ;)

Soooo about that J.M. YogaMeltDown session today.  Don’t even get me started on Verizon right now.  No On Demand. And they want to come back to our house for a third time to “try” to fix it (another 4 – 8 hour window we are at their mercy)…  imagine if we all did such subpar work at our jobs?  Yea, didn’t think so.

So needless to say no workout happened after work today :(  Lucky for them I felt like I had been hit by a truck by the end of the day. I think my full first week back to work along with working later hours since we’re busy has been both mentally and physically exhausting!  My body was SCREAMING to rest, so I listened.

But it’s all good though, bc guess who can do CARDIO starting tomorrow?!  I see some kickboxing P90X style in my veryyyy near future – booyah! :)  And I’ll be raring to go after all this time – learning to listen to my body has been such a revelation in my “older” years ;)

Oh yes, and did I mention that I had some fabulous goodies waiting on my doorstep when I got home?  Way turn to turn a frown upside down if I say so myself! :D

That of course I opened immediately upon walking in the door.  Gahhhh these are SO GOOD!  And GOOD for you, I mean seriously, does it get any better?

I also made up a quick small smoothie snack to hold me over til dinner, I was ravenous when I got home?  Another reason that workout woulda been tough haha…

Frozen blueberries, frozen almond milk cubes, coconut oil and shredded coconut

Freezing almond milk right before it’s 7-10 days are up, genius.

After some “chores” it was time to make some dinner… which I knew was going to involve some veggies tonight!

I rounded up some random friends and decided this was going to be a “dump it in the pot” kinda night ;)

  • 1/2 bag organic corn
  • 1/2 back california style veg
  • 1 can Italian tomatoes
  • 1 can white kidney beans, rinsed & drained
  • 2 cups chicken broth
  • black pepper

After simmering away for a while (30 min?) and letting it thicken up a bit

I thought, hey, let’s try out that new casserole dish why don’t we?

All broiled up with these for toppers :P (this casserole dish is not only cute, but super functional!)

 

P.S. This is seriously some of the best cheese bang for your buck.  It’s freaking delicious!

This tasted like a mixture of pizza & veggie soup and it just soothed my soul while also making my taste buds dance a happy-food-dance!!! :)

So glad I’ve got some leftovers of this one, oh yeaaaaaaaa

Alright, time for American Idol and lotsa Housewives drama tonight :D  You’ll know where to find me ;)

“Cream?” sauce gone green!

Hey friends! 

Well happy to report that things are going better here on the homefront, throat is under control once again and I don’t feel like I want to curl up in bed… I’m thinking these are good things ;)

Andddddd I got the go ahead from my eye doc to wear my contacts again too whoop-eeeee!  I haven’t been able to wear them in almost a month, which has been uber-weird for me considering I never wear my glasses.  P.S. Don’t wear your contacts when you are sick, ever.  Lesson learned!

So before I get into my dinner adventure with the much-beloved tofu, I have to tell you guys about a lil’ sumthin sumthin first – kapeesh?

Alright, onto the dinner adventure!

I’m sure you friends know that you’ve never seen me eat/make/look at tofu haha.  Well, look who just may have an open mind tonight :P

I purchased some random tofu last weekend on a whim, not knowing what the heck I had gotten myself into I did a bit of “research” on what to do with the stuff.

From what I learned, this silken tofu is best utilized in cream sauces and desserts – something that doesn’t need to hold it’s shape (learn something new everyday?)

So I concocted up a recipe idea in my head using these guys… it’s time for a “cream” sauce ladies & gents!

  • 1 small onion, chopped
  • 1 small clove garlic, minced
  • 1 small can mushrooms, drained
  • handful spinach
  • 1 tblsp (heaping) artichoke pesto
  • 1 package Mori Nu silken tofu
  • Parm cheese (unpic)
  • S&P (unpic)

First things first, saute the onions in some EVOO over medium until translucent (add water if they start to stick, best trick evah).  Then add the garlic for 1 minute then the mushrooms.  Plus S&P (we’ve reunited!)

Then it was time to play with the blender :)

Add the tofu, spinach and artichoke pesto and blend up until creamy, I added 1/3 cup H2O to help things out.  I gave it a taste and then did some baddddd… added the only Parm cheese we had in the house (cut me a break, The Man likes this stuff ;) )

Oh and while I’m at it, this artichoke pesto is legit!  Picked it up at ohhhhh World Market the other day LOL :P

 

Oh yea, dump this bad boy into the pan with the veg and get ready to start seein’ green!!

I made some “lasagna rags” as a serving mechanism for this green sauce of lurve… simply whole wheat lasagna noodles broken up into rugged pieces & boiled.  So fun! :)

Verdict?  Heck yea!  I really liked this ALOT.  I think some “better quality” Parm cheese would make it even that much better too :P

And btw, this whole batch of “cream sauce” had about 390 calories… and makes 3 servings.  You do the math ;)  Oh yea, and a decent amount of protein I might add…!

So I have to say that tofu round #1 was a complete success, whoop whoop!
