Taking a break, tropics style :)

 No, not from blogging silly bloggertons, I love this blogging world too much for that!! 😉  Just basically from everything else besides chillin’ with my man and cookin’ some delicious eats today!  My body let me know it was time for a rest, and I listened… back on track tomorrow 🙂
Afternoon eats:  Rachel’s Verbena Berry cottage cheese (over a fresh peach!)

Blackberry + blueberry + fragrant lemony verbena = YUMMMM!!! This lil’ guy also packs a whopping 15g of protein… I will definitely be on the lookout to try this again as well as other flavor combos (including cucumber dill & pear mangosteen!)

After my snackie I set out to marinade the chicken for tonight in this guy (recent World Market purchase!)

+ touch of soy sauce + black pepper + slice of fresh ginger (I keep in the freezer, stays good for months).  Just put everything in a ziploc and let the magic begin!

Then it was time to make the nectarine salsa to go with — I wanted to let the flavors combine thoroughly before we ate it!  Here’s the mix using Kristin’s recipe as my main guide

  • 3 nectarines (chop all fruits/veggies small)
  • 2 tomatoes
  • 1/2 onion
  • 1 jalapeno
  • fresh cilantro (2 tblsp approx.)
  • juice of 1 lime
  • salt/pepper
  • added: about 1 tsp organic raw blue agave for sweetness (obsessed!)

Quick tomato chopping tip I use to get all the juicy seedy part out easily:  chop tomato in half then squeeze out the pulp over your garbage bowl and you are ready to go!

After the dinner prep I was perusing the standby Better Homes & Gardens cookbook and found a recipe to use up some ingredients in the fridge that needed to go soon & one that I knew The Man would appreciate fully:  Bacon Corn Muffins (w/ some added wheat flour & fresh corn for “health”) 😉  The Man’s verdict?  Check, turned out good!

After all this mufin baking nonsense it was time for the real deal:  DINNER!!

1) Steam fresh broccoli (5 minutes) — add bacon for The Man (mine stayed meatfree)

2) Cook rice:  Boil 1 cup water, rinse 1/2 cup Basmati rice (2:1 ratio), add to boiling water and turn down to simmer for 15 minutes covered til done

3) Heat pan sprayed w/ cooking spray to medium heat, remove chicken from marinade & add to pan, sear on both sides (2 min each) then add remaining marinade, turn down to a little below medium and cover to finish cooking probably about 10 more minutes—– this method makes chicken SO JUICY fyi!!!

4) Remove chicken from pan once done, add white wine to sauce remaining in pan and let thicken up over medium-low for about 3 minutes to make a glaze for chicken
Serve all together w/ the fruit salsa that’s ready and waiting!! 


 Ya’ll, this dinner was extremely wonderfully delicious!!

Secondly, this marinade is sooooo good & if you have a World Market nearby go and get some asap!!  

Either way, I highly recommend trying this dish soon, it really was THAT GOOD 🙂  Healthy & delicious… what more could one ask for?

    • They had some other flavors of the marinade too including Guava Pineapple, pretty cool! Just had leftover nectarine salsa with lunch p.s. – this stuff just got even better overnight! Have a great one 🙂
