Herding Cats (sure felt like it today!)

I. THINK. SO.  I hardly ever treat myself to these delicious treats, so I was super pumped when I got to our meeting and the Smoothie King himself (jk guys) was there with coolers full o’ smoothies and explanations of each flava before we chose!  After the busyyyy-ness of this morning, this was just was I needed!  So what did I get?

MANGOFEST!!

A blend of mango, pineapple & OJ was just what the doctor ordered… and it was not to disappoint.  Soooo good!  And this was actually one of their “trim down” flavas – so it clocked in around 285 cals.  Since I had a light lunch, it was ON! 🙂 

So after a few more hours of work I trekked it home – with a quick stop off for this guy:

Anyone ever had this wine?  It is actually one of my faves in the $10 and below price range – an awesome blend of Chenin Blanc & Chardonnay.  If you like more of a citrusy, non-creamy Chard you would definitely like this blend! 🙂 Highly recommended peeps. 
 
So me and Mr. Herding Cats got started on tonight’s din
  • Thai Peanut Lentil Salad!!

The Man was getting some chicken in lieu of lentils to go with (not sure how he would take to the whole lentil thing yet, baby steps folks) that had been marinating in my new fave Aloha Mango Pineapple Terryaki Glaze and some soy sauce – this stuff rocksssssssss!!

So I modified the recipe a bit fanatic style, and here’s how it went:

Salad Ingredients

  • lentils (recipe calls for pre-cooked, however I just cooked my own per the directions – easy peasy)
  • sliced red bell pepper and/or zucchini and/or shredded carrot
  • fresh cilantro, chopped
  • cabbage, shredded
  • sliced green onion (I omitted)
  • chopped peanuts (I left whole)

I started with prepping the veggies

I sliced the red pepper into thin strips

Then I used a veggie peeler to make some zucchini shreds

I also chippity chopped the fresh cilantro – love this herb!

Then it was time to make the peanut dressing yummm!

  • 1/2 cup water
  • 1/4 cup creamy peanut butter (yea, guilty, it was Skippy Natural and I like that stuff gasppp!!)
  • 2 tblsp soy sauce (can use reduced sodium)
  • 1 tsp agave (can also use equal amount sugar instead, I’m just obsessed w/ the agave like woah)
  • 1/4 tsp ground ginger
  • 1 clove garlic, minced

Just put this stuff in a saucepan and whisk over low heat til combined and reaches the consistency that you like!  And get a spoon, and taste.  And taste again. And then again.  Bc it’s freaking awesomely delicious.  Seriously.

Then I cooked the terryaki chicken for The Man the same way I prepared it the last time around – this terryaki glaze is the shizzzz peeps.  I LOVE THIS STUFF (ok ok so I had a bite of the chicken, you caught me 😉 )
 
I prepped the salads, layering the shredded cabbage, red bell pepper, zucchini and chopped cilantro

Thennnn, I topped my salad with a scoop full o’ lentils and some of the peanut-soy-ginger-garlic dressing of lurveeeeee!

And I topped The Man’s salad with chicken (sliced), some additional peanuts for crunch, and peanut dressing love

So what is the overall review of this recipe you ask?
 
1) Dressing was AMAZING (!), flavas go perfectly and I would definitely make this again
 
2) Mixture of ingredients was very tasty, except I can’t say that I was the hugest fan of the shredded cabbage… I would probably sub out either lettuce or another veggie for this one next time
 
All in all this meal was healthy & delicious though!  With a minor cabbage replacement I think it could be salad perfection!  I liked the salad with the lentils A LOT…  Also liked the addition of the chicken too – so you could definitely do this either way 🙂
 
Now…. last question for you bloggertons, what to do with all these lentils (ummm slightly outta control haha)

Alrighty bloggies – it’s Thursday night which means time for some more wine (ooooops!) and some tv watching with my man.  Tomorrow is date night with some certain hot stud, I’m pretty excited 😉

  1. Hey hey! Fun smoothie and I love the name of the wine 🙂 Your dinner looks just delicious- I love peanut sauces. How about sloppy lentils? Just mix the lentils in with desired amount of tomato sauce (as sloppy as you want them) and equal amounts of cumin and chili powder. Heat on the stove top. You can either serve it on a roll or on a salad, or eat it by itself! Just a little a sloppy joe! I do that with kidney or pinto beans and call it a sloppy jane 😉

    • Oh that is the cutest idea, sloppy jane, I love it! The herding cats is seriously really good and clocks at a pricey (ha!) $5.99 — pretty much one of my go-to’s!! TGIF – have a wonderful day 🙂

That is such a cool name for a wine 😀 I usually make lentil loaf with cooked lentils- recipe varies, but usually something like 2 cups lentils, 1 egg, 1/2 cup oats/breadcrumbs, squirt of ketchup and some herbs/spice. Put in a loaf pan and bake 😀 Or lentil pate…puree with tofu/soft cheese/tahini (anything goes!) and spices/seasoning.

    • Hey! Thanks for the recipe idea – who knew that lentils were so versatile?! I like the lentil loaf idea a lot – I wonder if I could fool my boyfriend into thinkin’ it’s “real” meatloaf 😉 Have a great friday!!
