Hey bloggies! Early Saturday morning eh? I woke up with the roosters (jk) to do some YogaSculpt and of course, blog, before we get on our way to VA TECH!! Super parents are coming to stay at our house and take care of Lucy Dog – we are soooo lucky to have them right 🙂 !
This morning’s session was wonderful, I hardly ever exercise in the a.m. but waking up to these stretches and strength moves really was a nice change! After I yoga’d my heart out I made this guy — using my new chia seeds from Brandi!!!
- 1/3 cup oat bran
- 1/2 cup vanilla soy milk (+1/2 cup water)
- 1 banana, sliced
- 1 tblsp cookie dough PBLoco (I’m bad)
- crumbled ????
- chia seeds
Well since I am 99% positive that there is no way in he!! my lil’ sis will be awake this early on a Saturday nor reading this before we get there….. (these are surprise eats I made to bring her shhhhh!) – here’s what I crumbled on top!
I present to you OAT BRAN MUFFINS!!!! Modified from the one and only Better Homes & Gardens (love this book 🙂 )
- 1.5 cups oat bran
- 1 cup wheat flour
- 2 tsp baking powder
- 1/4 tsp baking soda
- 1/2 tsp salt
- 1 egg, beaten
- 3/4 cup applesauce
- 1/2 milk (I used 2%)
- 2 tsp agave
- 2 tsp honey
- 2 tsp pumpkin butter
- 3 tsp cooking oil
- 1/2 cup dried cranberries
Mix together dry ingredients, making a well in center. Mix together wet ingredients then add to flour mixture. Stir until moistened. Fold in cranberries. Spoon batter into muffin cups (spray with cooking spray first). Bake 15 minutes in a 400F oven. Voila!!! 🙂
