Today calls for a celebration — 1st pumpkin oats of the fall season that is!!!
I woke up so excited for this this morning (yea, I’m wack like that) and even though it is STILL raining and gross out (what’s up with this weather Richmond?) I knew that I had a fantastic brekkie to start my day and all was well! 🙂
But not only did I decide that it would be pumpkin kinda day, but that cream cheese was going to have to be added to the mix… bc I am obsessed. Period.
Here’s how it went down:
- 1/2 cup oats
- 1/2 cup vanilla soy milk + 1 cup water
- 1 banana, sliced
- 1/2 cup pumpkin
- 1 tsp LF cream cheese
- 1 tsp pumpkin butter
- pumpkin pie spice
Stove-top style whoop whoop! Just cook the oats in milk/water for a few minutes, then add half the banana, pumpkin, spices and pumpkin butter to finish cooking. Swirl in cream cheese at the end. Top with rest of banana, some pumpkin butter and pumpkin pie spice 🙂
They turned out wonderfully!! I loved the swirl of cream cheese throughout the oats – uber deelish 🙂
I also made some pumpkin spiced iced coffee to go with (coffee + vanilla soy milk + pumpkin spice) — easy peasy.
Lucy Dog was BEGGING me to let her model her favorite doggie shirt for you guys this morning (she can be so persistent!!!) hahaha. So she posed, like a statue?

Phewwwww it feels so good to get that one off my chest hahahaha. But for real, I got a few of these around the house for fun, and she actually gets excited when I go to put one on her… not sure why?
Well, The Man is still sleeping and probably will be for a while considering it’s his only day off all week I think I’m gonna use this morning to do some baking in le kitchen. I have been dying to make OhSheGlows banana doughnuts and also to try making my pumpkin ‘cookies’ again with some modifications!
Plus we are headed over to his parents later for chili and football and I’d love to have some treats to bring along!
