Here we are again… yet another Monday… Has everyone started their week off right today? 😉 I think I actually have considering I was more than thrilled to NOT be going to training at a ridiculously early hour today and instead going to my normal office. Who woulda thought that could make me so happy haha.
I also started the day off with this guy, which would make anyone’s day better if ya ask me! 🙂
So what is it? It’s yesterday’s kitchen creation of course! 😛 Topped with some cream cheese – ohhh yeaaaaa
Yesterday, while lounging around with The Man enjoying a most lovely Sunday, I decided to come up with a recipe to use up some carrots that had been lying low in our fridge for a while. So I though, hey, why not some sort of carrot cake “thing”?!
CarrotCake bread (w/ pears & raisins) it was! Here’s how it went down
- 3 carrots, shredded
- 1/2 pear, cut thin
- 1 pack raisins
- 1.5 cups whole wheat flour
- 2 tsp baking soda
- 2 tsp baking powder
- 2 tsp cinnamon
- 1/2 tsp salt
- 1 cup unsweetened vanilla almond milk
- 3/4 cup sugar free maple syrup
- 1 tsp agave
- 1 tsp pumpkin butter
I definitely could see this being a versatile recipe friends, if you don’t have agave on hand – just use sugar or more syrup; if you don’t have pumpkin butter then just kick up the cinnamon a bit and maybe add some nutmeg? If you want to use regular milk, go for it. Work with what ya got peeps!
Just mixed up all of the ingredients and pour into a bread pan (coat w/ cooking spray)
Bake at 350F for about 40 minutes
And voila! I couldn’t resist a slice of this bad boy right away
So moist and delicious friends! This is the first time I have ever baked without using eggs/milk/etc (qualifies as vegan I think? but I’m no expert so don’t want to misstate that) and it turned out phenomenal!!! I love that you can lick the spoon too while you go (no eggs!) 😉
What’s even better?! This whole loaf clocked in at approximately 910 calories… meaning sliced into 8 slices each slice has just over 100 calories…. YES PLEASE! 🙂
I am not a baker by any means, you know me, I hate to follow a recipe and the “science” of baking scares me somewhat… so I was pretty proud of this creation! Esp since I can feel good about eating it.
Now you just gotta go find some cream cheese to spread on top…. 😉

Quick side note – I must have been in a math mood yesterday bc upon calculation I found out that these guys were only 100 cals each too – what are the chances?! Gives a whole new meaning to the “100 cal pak”, no? 😉
