There’s no time like the present…!

Woahhhhhhhhh busy day!!  Anyone else feelin’ like this guy?

That’s the fun of it though friends, right?!?! 😉

So I ended up getting out of work a few hours early which was wonderful, then attempted to battle the traffic disaster that is the holiday season at Short Pump (if you’re from Richmond I know you know what I’m a’talkin’ about 😉 )…. yea that was not so wonderful haha.

Ah well, at least I made it out alive & with half my sanity and proceeded to head down the street home to get into serious cookin’ mode before Mr. Man got home!

First up – coconut macaroons 🙂  Remember these guys?  There was some demand for some more so who was I to deny the people?!

Then I wanted to get 1 of the 7 dishes for tomorrow’s dinner ready ahead of time…..         7 dishes you say?!  Let’s back it up for a second so I can tell you guys about how our family celebrates Christmas Eve 🙂

As you well know, we have Polish tradition that runs through our fam so we celebrate what is called Wigilia – the traditional Christmas Eve supper in Poland.  The number of courses is traditionally established to be either twelve or an odd number (hence the 7!) and we also abstain from eating meat at this meal – lil’ sis should be thrilled 😉

So anywho, back to the dish I was prepping for tomorrow… none other than some traditional sauerkraut!

I present:  Sauerkraut & Noodles.  Probably one of my fave dishes on Christmas Eve oddly enough?  So simple, so good.

  • sauerkraut (1/2 package)
  • shell noodles (1/2 box)
  • onion, sliced
  • 2 tblsp butter
  • black pepper

First saute the onions in half the butter for a few minutes, season with black pepper.

Add the sauerkraut (which I actually rinsed first) and allow to warm through.  Add the rest of the butter while you’re at it 😉

Meanwhile boil up the pasta according to directions, then just add to the kraut/onion mixture and voila!  Oh wait, no pic?  You’ll just have to wait to see the finished product featured at Christmas Eve supper! 😛

After this biz-naaass I still had dinner to tackle & thought hey, there’s no time like the present to pour a glass or three of some recently purchased vino! 

Good stuff.

Onto the dinner adventure!  Remember the Mexican night that was to be had last night?  Yea, well tonight it was definitely calling my name!  I had some of my fave salsa that I knew I wanted to use….

I ended up marinating some chicken breats in the good stuff for a lil’ while

Then giving them a quick saute for a few, transferring to a baking dish to finish in the oven, don’t forget the cheese too! 🙂

Really liked this random concoction – def a great go-to quick dinner idea for the future!

I also cooked up some peppers, onions and corn

And some of the leftover hashbrown casserole from The Man’s holiday party (they got some bad news at work and apparently not many folks had an appetite which totally bummed me out for more reasons than one obviously 😦 who gives their employees bad news just days before Christmas?!?!?! ugh don’t get me started )

However I must say that this casserole turned out great, and The Man requested that we had it tonight bc he liked it so much… looks like I can add this to the recordbook for fun things to make for parties!

Now I must go tend to some things around the house here, and by “things around the house” I truly mean sitting on my bum watching the movie “Up” with Mr. Man 😉  Hey, we gots to rest up for the festivities tomorrow since we are hosting the Christmas Eve celebration!!!!!

I’ll check back in early on and let you guys in on the 7 dish menu too of course – I wouldn’t leave you hanging like that!
