“Hers” dinner

Good morning everyone!  How was your Friday night?

Well considered I’m stillllll dealing with this throat thing, we decided to make it a low key night and rent a movie.  Gee I woulda sold my tonsil for really enjoyed a glass of wine with said movie 😛  But alas, that was a definite no if I ever want to get better….

Has anyone seen The Invention of Lying with Jennifer Garner?  Haha I thought it was pretty awesome, it’s definitely a certain quirky sense of humor but I really enjoyed it!

So I guess it’s time for a recap of last night’s “Hers” dinner, what-da-ya-say friends?!

Since I’m still on the “can’t eat solid foods train” for the most part, I decided to make a veggie mash after some inspiration from the Pure2Raw ladies – who are the sweetest p.s. 🙂

They suggested as an alternative to smoothies that perhaps I make a mash using roasted veggies!  What a welcomed change to the egg/ice cream/smoothie choices I’ve had for the past few days 😉

Roast up some ginormous sweet taters for about an hour at 375F

Once cool, peel and chop into large chunks.

Saute up some diced onion in a lil’ coconut oil.

Add the sweet potatoes.

Then add 3/4 cup lowfat milk and some water before bringin’ out this guy!

Presto blendo, I’m in lurveeee

An added dash of cinnamon, drizzle of maple plus a side of ricotta and dinner was served.  A blend of sweet & savory, lovely!

It was no homemade tortilla with fresh guac(just sayin’…) but I’m workin’ with what I got here 😛

And now I have a ton of leftovers for today/tomorrow too, score!  Immersion blender, you are my hero.

Well on today’s agenda are some errands, as long as I keep taking Ibuprofen my throat is keeping itself mostly under control (my liver hates me) so hoping to get through those. 

As for Valentine’s Day plans, we had a wonderful dinner planned at a new tapas restaurant in town but unfortuately had to cancel for obvious reasons.  So we’ll probably just end up doing something around the house, but we shall see….

The Man had also planned an amazing trip to stay at this fabulous Inn and visit a few wineries, but we had to postpone that as well due to the upcoming surgery 😦  We did this trip last February and it was seriously one of the best weekends of my life


romantic, beautiful Inn in a town so small it consists of 1 main road (population, 67), the gorgeous mountains of Virginia with the most glorious wineries tucked alongside, not to mention the amazing food (the Inn is a top restaurant in northern VA)… pure bliss.  I’m hoping that it will be even better when we get to go in the spring, post-surgery! 🙂


It’s also Lucy Dog’s birthday tomorrow!  She’ll by 5 🙂  The SPCA told me she was born in February, date unknown…. Soooo when I got her I seriously was at a point in my life when I was so fed up with relationships (hence, dog) and decided that I was anti-Valentine’s Day why not make it a celebration of this pup’s special day!

Now my views on Valentine’s Day may have changed somewhat eh hmmm thanks to a certain someone 😉

  1. Awww, so sweet that Lucy’s bday is celebrated on V Day! 🙂 I love valentine’s day, mostly just b/c it’s an excuse to stay in with Andrew and have a romantic dinner. We don’t get all extravagant though… he usually gets me flowers and cooks for me, but that’s about it – perfect for me! 🙂

  2. I like Valentine’s Day, but have never really done anything too extreme on it (maybe a dinner out if I’m feeling really crazy haha). But this year Chris & I are staying at B&B for the weekend – a couple weekends after Valentine’s Day since everything was booked waaaaay in advance for this weekend!

  3. The mashed sweet taters look so good. If you have to eat soft foods, that’s a definite winner! Sorry to hear you had to cancel your trip, but I bet it’ll be even better in warmer weather 🙂 I know I’ve said this before, but I am just in love with Lucy. Black labs are my favorite!

  4. Glad you’re finding some delicious eats despite the throat issues. Again- SO feel for you! You will feel 100% better a few weeks after the surgery! I swear! And the trip will be incredible 🙂 Happy birthday to your little baby doll! Enjoy celebrating

  6. oh lovepie I wish I had you around during my awkward teenage years when I had braces and couldn’t eat anything but soft foods. You have perfected the art of mashing.
