Brunch entertaining

Good morning afternoon? friends!

Wow where did the morning go…?! 😉

After waking up and cleaning up the house a bit, it was time to have Fanatic Mom, Dad and Uncle over for some brunch entertaining!

On the menu:

  • Sweet apple pastries
  • Eggs w/ peppers, onions and colby jack cheese
  • Waffles w/ maple syrup
  • All natural smoked maple bacon

I picked up some of these delicious mini-pastries at the store the other day, and after a few minutes to warm in the oven they were ready for snackin’ until brunch was ready!

 

Then I got started on the eggs

  • 6 organic eggs
  • 1/3 block colby jack, chopped up
  • 1/2 onion, diced
  • 1/2 cup peppers, diced
  • 1 tblsp butter
  • S&P to taste

I cooked the peppers & onions in butter until soft and translucent.  I splurged with butter this morning because my Uncle really likes the stuff, and who am I to not cater to my guests? 😉

After the veggies were ready, I added the eggs for a few minutes until almost cooked, stirring occasionally.  Then the cheese went in until the melted & the eggs were dunzo.

There was also bacon on the menu, which I used my fave method to cook —>  BAKING!   Just plop on a foil lined baking pan and into a 400F oven for about 15 minutes and voila!

This Wellshire Farms all natural Smoked Maple bacon was fabulous!  And baking works like a charm every time 😛

Last up were the waffles, made in our waffle maker with a basic mix.  Served with maple syrup & butter, warm & deelish!

I haven’t really experimented much with early afternoon entertaining, but I must say that I am really diggin’ it after today!  Why?

  • It usually involves making dishes that are easy to prepare, therefore allowing you to be in & out of the kitchen and enjoying the time with your guests as you should be!
  • The meals are not only no-fuss, but usually fairly economical since eggs & bacon don’t normally blow the budget.

So there you have it, a lovely morning spent with my fabulous family and some wonderful eats 😀

And now I’m off, I have a fun post planned for tonight so I gots to get to some things for that 😉  I also am in desperate (seriously ha) need of a workout today, it’s been since Thursday oooops!  We are going to visit The Man’s parents today too and make this a full family fun day….

Phew!  Then after that a fun dinner item planned too – perhaps some more curry is involved?

  3. I love having people over for meals….why don’t I do it more? 🙂 That is actually a great idea to have people over for brunch – plus, who doesn’t love breakfast food? Everything looks amazing!

  5. Talk about comfort food! I was sold at those buttery pastries…were they good even for something frozen?

    • They were actually fresh from the bakery when I bought them, but we didn’t finish them in time so I popped ’em in the freezer to hold up for a later use! It worked perfectly after a quick reheat in the oven 🙂
