Gotta start it off with a HUGE THANK YOU for all your wonderful support on both the job news earlier today and the OpenSky news yesterday 😀

I’m really excited about both of these new adventures!

Well in addition to all things going on this week (as if we needed more), I had a trip to the retina specialist today.  One that I now have to take annually due to a condition called lattice degeneration.

Back when I was in college my eye doctor noticed small “holes” on the tissues of my eyes and I actually had to have a series of laser surgeries (no, not lasik) to “seal” these holes to keep them from causing potential retinal detachment.  Since the treatments things have stabilized but I still have to visit the retina specialist each year since I am “at risk”.

Happy to report that today was a great appointment and everything looks a great!  Thank God.  I really couldn’t handle another surgery after the tonsillectomy, especially one that involves thousands of lasers into my eyes while I’m wide awake…

But anywho, I won’t bore you with anymore of that “fun” kapeesh?

How about some food?

Dinner tonight was “scrounge-up” kind of event.  I had some random items that needed using!

  • No Yolks egg noodles (3/4 package)
  • 1 can cream of mushroom soup
  • 1 onion, chopped
  • 1 zucchini & 1 summer squash, sliced
  • 1 package mushrooms, sliced
  • 1 clove garlic, minced
  • S&P
  • 1 tblsp olive oil

I sauteed up the onion, zucchini, squash and mushrooms in olive oil (S&P) until tender and starting to brown.

Then added the garlic for another minute or two.

At this point I added in the cream of mushroom plus a can of water, stirring to combine. 

I prepared the egg noodles per directions, combined with the mushroom sauce and then poured into a baking pan (coat with cooking spray)

Then popped into a 375F oven for 10 minutes until bubbly, warm & deelish… and if you want, add some fresh shredded parm to top and broil for a minute or two 😛

All served up with some additional grated parm 🙂

Comfort food at it’s finest, this was really good!

To go with I finally joined the rest of the blog world and made some kale chips w/ olive oil, salt & parm…

Verdict?  Ehhhh, didn’t love ’em?  Perhaps I used (1) the wrong type of kale (2) the wrong “toppings” or (3) maybe I cooked too long? help!!!

I also have to tell you friends that I did two fabulous ExerciseTV workouts today – still mixin’ it up over here!

I almost bailed on the workout since today was such a crazy long day, but glad I stuck it out and did it 🙂 

Now I’m off for some American Idol with Mr. Man and an early bedtime, I have an exciting early breakfast meetup in the morning!!

  1. Oh I love kale chips!! Not sure if you did anything wrong… I always use Kath from KathEats’ recipe. I like dipping them in ketchup! 😉 Your egg noodle dish looks so comforting!!

    I’m a member of the crappy eyes club too! I am almost legally blind, ha. Have to special order my contacts, since I need ’em so STRONG!

    The casserole looks delish, love throwing together random shizz and baking it with cheese 🙂

    When I made kale chips, I used the same combo. BF LOOOOOVED them, I thought they were just…MEH..were yours crumbly crispy, or chewy crunchy?

  3. This dish looks like a ‘veggiefied’ casserole that I cannot remember the name of for the life of me. But it has beef, mushrooms, cream of mushroom soup, etc. Looks nummy!

    Sorry about the kale chips 😦 Maybe your kale was too thick? The “rib” of my kale I used wasn’t beefy at all, so it cooked pretty evenly. I’d try again using thinner kale, if that makes sense?

  6. I’m sorry to hear about your eye condition, but it’s great that they’re staying healthy!! Hope you have a great hump day 🙂

  7. I’m glad everything is well with your eyes. I know how scary it can be. I was diagnosed with Keratoconus last year. It’s a gradual thinning of the cornea, which might require a cornea transplant at some point 😦
    It is hereditary. My Dad has it, and has already had one transplant and will be needing another very soon. I thought I was in the clear but was diagnosed much later on in life. So far it is treatable with hard contact for me, but they are so hard to wear. Hate them.

  8. Glad everything looks good on the eye front. 🙂 Anything to do with eyes scares me…I want Lasik but I’m too scared to do even that!

    Thanks for your honest review on the kale chips….I’ve actually never had them, either! I’ve only had kale in green monster smoothies, but I’m not sure how I would like it just by itself?
