Sweet Potato Quesadilla

Happy Tired Tuesday!

Whoa is it just me or was today outta control?  Learning the ropes for my new job is quite the mental drain considering it is so much different than what I am currently doing… compounded with it being the busiest week of the month I can tell you that 10 hours just flies by… Smiley

When I got home I decided that an easy his & her’s quesadilla dinner was in order!

Let the Cinco de Mayo festivities continue… 😉

For her:  Sweet Potato Quesadilla

Remember those sweet potatoes I baked up last night?  Well I planned ahead & made an extra for tonight!

To make the “filling” I used the following ingredients:

  • 1/2 cooked sweet potato, chopped
  • 1/4 cup cannelini beans, rinsed
  • few spoonfuls salsa
  • fresh cilantro
  • 1 tblsp feta cheese


For him:  Beef, Salsa & Cheese Quesadilla

Just reheated the seasoned ground beef from the party (which I froze) and layered with salsa plus cheese.

As a side dish I made a spin on this recipe, which I first saw on Mrs. IGE’s site and knew I would love!

Since I didn’t have all the ingredients on hand I made some modifications of my own & called it “Fanatic style” 😛

Maybe one of these days I’ll follow a recipe haha, just sayin’…

  • 1 package frozen corn
  • 1/2 package frozen green & red peppers
  • 1/2 tblsp butter
  • 1 tblsp whipping cream
  • 1 tsp paprika (about)
  • 1 tblsp fresh thyme (about)
  • 1 tblsp dried oregano
  • salt
  • pepper
  • Frank’s hot sauce (about 1 tblsp)


Let’s serve it up!

This sweet potato quesadilla blew me away!!!!!!!!  The sweet tater & beans made for such a hearty filling I seriously was savoring every bite 🙂

So I ate it more like a taco, sue me 😉

The corn dish was so fresh yet decandant too, Mrs. IGE really knows where it’s at!

Talk about a creatively delicious way to use up more leftovers & items we had on hand (still haven’t grocery shopped this week!)

Well I better go get some rest friends, this week has been exhausting already.

And if you notice I haven’t been on my “usual” workout schedule either…

Why you ask?  Well I decided that I need to ‘let go’ for a few days while I am going through such a busy time at work and just let myself chill, workouts should resume next week and I think my body & mind will thank me since I am already exhausted as is 🙂

    Good call on taking it easy for the next few days. It’s so important to listen to our bods, right? Plus, I’m sure you burn a few cals cooking all your fabbie meals. It’s not easy being such a gourmet chef 🙂

  3. Girl! You deserve to let it go a bit!! Training for a new position is always mentally and physically draining. What a yummy din din. I had sweet potato tonight too- it was incredible. I like your version better thought 😉

    I’vee never thought of putting sweet potato in for a quesadilla! that sounds amazing 🙂 with some daiya cheese! i’m definetly going to have to try this out 🙂
