It’s our last day here, so I’m gonna keep it short & sweet w/ a just a few words and lotsa pics for you friends!

Homemade Mexican rice:
- 1 cup brown basmati rice
- 1 can Rotel tomatoes (w/ lime & cilantro)
- 1/2 onion, chopped
- 1 clove garlic, chopped
- 1 tblsp EVOO
Saute onion & garlic in some EVOO until golden. Add rice and water, cook until almost done. Add tomatoes. Continue cooking until liquid has fully evaporated.
Serve with chicken fah-gee-tas!

- tomato dressed w/ lime, S&P
