Lazy Sunday Vegetable Soup

After a bountiful trip to the farmer’s market this past weekend – and some extra “around the house” time on my hands yesterday – I decided what better than to mix these “2 powers” and whip up a day-ahead veggie filled meal for our busy start to the work week?!

Plus there were some other ingredients that needed using up and what better way than a pot of soup to make that happen?!

This recipe reminds me so much of soup that my mom used to make growing up, in fact our whole downstairs smelled like it yesterday afternoon and it was just lovely 🙂


Of course these ingredients are interchangeable, go ahead and use whatever veggies you like/have and if you don’t like beef broth than go the chicken or veggie route!


  • 2 carrots, chopped into small pieces
  • 2 onions, chopped into small pieces
  • 1 large clove garlic, chopped small
  • Handful of fresh green beans, chopped into 1” pieces
  • Medium sized red potatoes, chopped into small pieces
  • ½ head cabbage, sliced
  • 1 can crushed tomatoes (or boxed if you can find them)
  • Approximately 4 cups organic beef broth (or any other broth you like)
  • Dried basil (about 1-2 tsp)
  • Dried oregano (about 1 tblsp)
  • Dried thyme (about 1-2 tsp)
  • Sea salt
  • Black pepper
  • 1 tblsp olive oil

First step, sauté the onion and carrot in olive oil for about 5 minutes (don’t let them brown).  Add in the garlic for the last minute or two, also season with salt & pepper.

Then add in the green beans…

Plus the canned tomatoes and beef broth.  Also season with your dried herbs at this point – feel free to use however much you like!

Cover the pot and let this simmer for about an hour (see why it’s perfect for a lazy at-home Sunday?) 😉

At this point, go ahead and add in your potatoes.  Cover the pot and give these about 10 minutes to begin to soften.

Lastly, add in your shredded cabbage…

Then cover and allow to continue simmering for another 40-50 minutes until the cabbage and potatoes are tender.

Smokin’!! 😛

At any point during cooking you may add more liquid as necessary and more spices too, I definitely did.

Yummy comfort in a bowl – yes oh yes!

Now if you’ll excuse me, since dinner was as easy as 1-2-3 tonight, I’ve got some QT with Serena and Blair to tend to 😉

  1. Oh yes- one of the reasons I love making soups so much- eassssssssssy! Plus you can adjust the recipes for whatever you have on hand. Looks delicious. And comforting.

  3. I have yet to get on the soup/stew train this fall season, but I must do it ASAP. The ease of preparation for such a great payout is too good to pass up!
