Chobani Pasta Salad!

The Christmas tree is up!!!

And the dining room is set for a Christmas feast 😉

And I’m ready to share an easy dinner with all of you featuring one of my favorite things ever 🙂

Chobani Greek yogurt!!!

Do you not love this stuff? 

 Not only do I love the flavored ones straight up (hellllloooo pineapple lovahhhh) but also using the plain as a substitute for items such as mayo or sour cream!

And with 18g of protein, it’s a pretty great swap 😉

So tonight I added some plain Chobani to the mix of a classic macaroni salad to come up with a low-fat, high protein version of everyone’s (or maybe just my?) favorite pasta salad!

And so what if it’s not summer anymore, this is good anytime of year IMO 😛

Italian Macaroni Salad w/ Greek Yogurt Dressing

  • macaroni noodles (about 1/3 of a large 32 oz. box), cooked & cooled
  • 1 green pepper, chopped
  • 1/2 onion, chopped
  • 3 roma tomatoes, chopped
  • 1 can black olives, halved
  • pepperoni, quartered
  • cheddar cheese, cubed (about 2/3 package)
  • pepperjack cheese, cubed (about 1/4 package)

Dressing

  • 1 container Chobani plain yogurt
  • juice from 1/2 a lemon
  • 5 tblsp white balsamic vinegar
  • 1 tblsp olive oil
  • 1/2 tblsp dried oregano
  • 1/2 tblsp dried basil
  • sea salt & black pepper to taste

This pasta salad comes together in 1-2-3!!

While the macaroni is boiling (according to directions) get all the other salad ingredients ready to go.

Chop the veggies.

Christmas colors!  Don’t tell me you weren’t thinking it too 😉

And prep the pepperoni & cheese.

Once the pasta is done cooking, drain and rinse under cold water until the pasta is cool.  Add to a large bowl along with the chopped veggies…

and the pepperoni & cheese.

Lookin’ good already!

At this point, pop the pasta salad in the fridge to chill while you mix up the dressing.

This dressing couldn’t be easier. And instead of being full of heavy calorie-dense mayo, it’s made creamy by the addition of the smooth & rich Greek yogurt. 

Just combine the ingredients above and give it a stir!

You will be amazed at how creamy & delicious this turns out without any mayo what-so-ever 😀

When you’re ready to serve, lightly stir the pasta salad with the dressing until the combined. 

And into the bowl it goes!

Mmmmm mmmm, this turned out great! 

I was curious to see how The Man would react to his “yogurt pasta salad” but let’s just say he had seconds and I got just a few compliments 😉  Love that he has such an open mind to trying these new combos and love even more how much he also enjoys them!

So there you go, a healthy undercover way to prepare a delicious pasta salad classic!  Even though it may not be 80 degrees outside where you are (or where I am!), I hope you’ll give this salad a try 🙂

Somethin’ outta nothin’!

FRIDAYYYY!

But not only is it just any friday though my friends, it’s vacation friday for this lady!

You got that right, for the next week I’ll be bloggin’ to you from one of my favorite beaches everrrr 😛

So ready!

The Man will be staying behind to take care of the house/Lucy dog for a few days and then joining the fam for fun in the sun later in the week…

And thankfully Lucy dog will be under the care of The Man’s brother & girlfriend for the rest of the week – so glad they could stay here with her – thanks again guys!

So in an effort to really “scrape the cupboards clean” before I leave, tonight’s dinner was quite the making of “somethin’ outta nothin’!”

One thing I dislike strongly is wasting food before leaving for vacay – coming up with meals w/ what we have left in the house is kinda fun and cleansing for the soul, no?

First up, we have a pasta salad!

Dressing up a boxed pasta salad makes for some serious yum-factor in a pinch 😀

And just ’cause it’s in a box doesn’t mean that you can’t “spice it up” with your own add-ins, right?!

Meet edamame, adding fiber & protein to your everyday pasta salad!

Other additions included:

  • chopped green pepper
  • chopped onion
  • fresh basil
  • white balsamic vinegar
  • S&P
  • 3 tblsp water, 1 tblsp EVOO, spice packet

Me = loved it.  It actually surpassed my expectations and turned out phenomenally well!

I was a bit worried about The Man however, after he says to me, “wtf is edamame” hahaha 😉

Wellllll… guessed who demolished his whole bowl and proclaimed it to be really really good.  Score!

Onto the next bit of randomness, utilizing the only protein source we had in the house aside from said edamame & peanut butter…

No-mayo deviled eggs!

Now I don’t care much for deviled eggs (not a yolk fan?) however Mr. Man loves these suckers made w/ the traditional mayo recipe…

I spy a challenge… 😉

Since we don’t keep mayo in the house (eck, despise the stuff, sorry friends) it was time to improvise!

Using this recipe & these friends:

This came outta the kitchen…

(a dusting of cayenne on top)

… to which The Man proclaimed to be “better than any other deviled egg he’s ever had.”

Booyah!

I was going to actually give one a try but when I got back into the den (it was a casual eating night in our house!) they were G-O-N-E haha 😛

So lesson learned tonight, making “somethin’ outta nothin'” can be tasty, healthy AND economical!

There you have it, this week is a wrap and it’s time to get my vacay on 😀

Mexi-Fresh!

Today’s “day off” agenda included:

  • working a couple hours this morning (this new job, I tell ya! 😉 )
  • poolside time at The Man’s parents’ house
  • quick grocery shop
  • working a couple hours again this afternoon

  • easy dinner
  • relaxation & The Bachelorette!

Speaking of dinner, it was a transformed leftover kinda night!

More specifically, the fabulous hickory smoked barbecue grilled chicken from last night + the homemade salsa verde from earlier this weekend 🙂

Transformed into a Mexi-Fresh salad with the following;

  • red leaf lettuce
  • cucumber
  • cherry gold tomatoes (can’t get enough!)
  • fresh cilantro
  • barbecue chicken
  • salsa verde

I’m slightly obsessed with this tomatillo/onion/garlic/cilantro blend…  just “slightly” 😛  Olé!

As a side I made a pasta salad, from a box.  Yea yea yea, I know, but it was easy plus good & I ain’t scurred to say it 😉

I substituted plain yogurt for mayo (shhh! don’t tell The Man!) and added some freshly chopped ripe red tomato.  Plus some oregano & black pepper.

‘Twas an easy + delicious dinner indeed 😛

A long work week awaits, 4 days but it’s gonna be a doozie.

HAPPY FITBLOGGIN FRIDAY FRIENDS!!!!!!!!!

Well the day has come, in just a few short hours I will begin my adventure up the road to Baltimore with my homegirl Brittany for a lil’ food, fun, fitness & who else knows what 😉

In order to rush outta work in time to get home & finish packing before Momma Fanatic picks me up to go to the train station (you think I’m going to drive Richmond through DC on Friday at rush hour then you’ve lost yo’ mind haha) – lunch was a quickie!

Leftover Pasta Salad

Chocolate Coconut Milk Yogurt (!!squeal!!)

I may as well buy a coconut palm tree at this point, no? 😛  I could live off this stuff….

Looks like we’ll be getting into Baltimore around 6pm tonight if all goes as planned, just in time for the POM Wonderful cocktail reception!  Then I think it’s food bloggers take on the town for the rest of the night 😀

These guys are in charge at the ol’ homestead…

I’m thinking I should try to not be too scared about that lil’ fact…. 😉

Superrrr Smoothie!

Well happy FitBloggin’ Eve my friends!

I am getting so pumped about this weekend, it’s almost heeeeerrrrre 😀 

But let’s back it up to earlier today when I was not quite so “pumped” if you will, in fact I was feeling pretty blah after I got outta work and wasn’t sure why? 

I made a stop off to pick up my re-sized ring and then to Whole Foods to spend my life savings gather some dinner goodies and other fun stuff…

My energy levels were just. so. low.  I really wanted to get in a workout but all I could think of was sleep….

Here’s where we find:  Superrrr Smoothie to the rescue!!

So what made this smoothie so super you ask?

That would be maca powder (if you haven’t read up on this stuff, please do, it’s pretty incredible), which I have been dying to try after seeing it on some bloggies & today was the day!

  • 1/2 banana
  • 1/2 cup frozen blueberries
  • handful spinach
  • 1 tsp coconut oil
  • 1/2 tsp TerrAmazon maca powder
  • vanilla almond milk (I freeze in ice cube trays, lasts forever)
  • water

All whirled up and voila!

After this frosty glass of delicious, I got to prepping some of our dinner ahead of time (notice, no sleep yet…)

And once that was done I ended up doing one of the best workouts I have done in a while! (what, who is this girl?)

It all started off with a 10 minute Cardio Blast session with Amy Dixon on ExTv (intense!) followed by 5 straight minutes of abs w/ the medicine ball, chatarungas and pushups.

Then The Man got home and we walked Lucy Dog for 15 minutes.

And finally to finish things off I did a Cindy Whitmarsh 12 minute ab routine that was crucial!

So maca, coconut oil, fresh fruit & veggies… I have my opinions on the power of food, but I’ll let you decide for yourselves 😛

Well back to that dinner, how bouts it?

I was craving pasta salad tonight, all full o’ veggies.

  • 1/2 large cucumber, diced
  • 2 tomatoes, diced
  • 1/2 onion, diced
  • 1/2 can olives, drained & sliced
  • 3/4 package pasta, cooked & cooled
  • 1/2 cup colby jack, diced
  • 1/4 cup Italian Dressing
  • S&P (unpic)
  • Oregano (unpic)
  • splash balsamic (unpic)

Added to the pasta with the rest of the ingredients and here you have it

Ummm guess I was cooking for 20 tonight? hahaha

I also found some stuff at Whole Foods that I knew The Man would love… I really find myself wanting to buy the “good stuff” when it comes to meat these days.  It’s really worth it to me to feed us meat free of hormones, antibiotics, etc.  Not that I’m perfect every time, but the more I can strive to be the better 😀

First up, Jerk Chicken Legs.

Sometimes when it’s done for you, and it looks this good – you just gotta go for it!

They got the thumbs up, and homeboy is uber-picky about chicken “parts” haha.  Trust.

I also snuch a small bite, the seasoning was phenomenal!

Next up, BBQ Pork Chops.

Cooked up for a few on the ol’ stovetop.

He was definitely a happy camper tonight!

I, on the other hand, wasn’t really feeling like meat (TWSS? bad bad joke Steph haha) so decided to cook up the last of my beloved Quorn Chik’N patties.  Smothered w/ ketchup & mustard lurveeeeee obvi 😉

With a side of pasta salad – which was really really really good fyi!

Much like today, this dinner was all over the place but in the end turned out quite fabulous! 🙂

I gots to run and finish up some packing for travels tomorrow and hang out with my fave mister… I’m gonna meeeees him this weekend!  And yes, we are somewhat like Alexis & Jim and really don’t travel much without each other… it’s just how we roll.  So yes, I will miss him alot 😛
