Dinner w/ the Parents!

Happy Monday everyone!

My favorite oxymoron or whatever you want to call it 😉

I can’t wait to fill you friends in on the dinner that I fixed for Fanatic Mom & Dad last night!

As I hinted at yesterday, this meal was based on a dish that Mom & I had just tasted at last week’s Whole Foods Five After Five event

Remember how much we really liked this dish?!  And bought the fresh chicken sausage right then, right there 😛

Well it was time to put that delicious-ness to good use!

WARNING:  This recipe is definitely not on the bikini-ready diet plan.  But I promise that it is so worth the splurge!

First up were the fresh garlic, basil & sun-dried tomato chicken sausages,which were NOTHING like their pre-packaged counterparts, no match!

Cooked in a pan on the stove top until done, then sliced into 1/2 pieces on the diagonal.

Check out the big chunks of sun-dried tomatoes!  Not to mention a flavor like you wouldn’t even believe.  These were truly fabulous 🙂

The rest of the dish consisted of:

  • 1/2 quart half & half
  • 1 container (1 cup) basil pesto
  • 1 cup fresh grated Parmesan cheese
  • 1 package whole wheat penne
  • fresh basil

So easy, just add the first 2 ingredients to the sliced chicken sausages and let cook over medium heat until reduced by about half.  At this point add in your cheese and let melt through.  Finish off with some fresh basil and voila!

So decadent!  The smell… oh the smell…

Once the pasta finishes cooking, stir everyone together and serve!

Not even gonna try to explain how good…!

And what pasta dinner would be complete without a fresh salad?

This was Fanatic parents first time experience “the dressing” 😉

They LOVED it!  Like us, they couldn’t believe that such a simple combo of flavors could turn out so well.  White balsamic vinegar… life changing?

For dessert, the theme of indulgence went on!

Lemon pound cake.  Peaches & sugar.  Cool Whip.

Fabulous end to a wonderful dinner 🙂

It was such a great way to close out the weekend, I love having Fanatic Fam over anytime and a great meal just makes it even better!

I can’t wait to share the make-ahead Italian dinner that we had tonight with you friends too… to which The Man claimed was “better than anything you could order at a restaurant” (*squeal!* he’s a toughie on Italian foods!)

Italian take 2!

Well guess what ended up on our menu tonight?!

None other than another Italian inspired meal using some of the fresh vegetables that I purchased at the Farmer’s Market!

Veggie Pasta w/ Chicken Sausage

  • 1 can TJs tomatoes w/ basil
  • 1 onion, chopped
  • 5 small summer squash/zucchini, sliced
  • 3 small cloves garlic, chopped
  • 1 tblsp EVOO
  • fresh basil & Italian parsley
  • dried oregano, S&P
  • 2 TJ’s Italian chicken sausages, sliced
  • pasta
  • black pepper Parmesan cheese, grated to serve

So here’s what I did —> got the sauce started before my planned workout so it had time to simmer away and let all the flavors blend.

If there’s anything I’ve learned about a tomato sauce, it’s that it really gets better with time.  At least in my opinion 😀

Begin with a saute of the onion in some EVOO while you continue slicing the other veggies.

Then add in the summer squash and cover for just a few minutes until it softens up.

Throw in the garlic towards the end too, yummmm 😛

While this is cooking up, give the sliced chicken sausage a quick saute in cooking spray until browned on the outside.

This will add an additional layer of flavor to the sauce.

Now comes the messy part, tomato squishin’!!!!

Since the tomatoes in this can were whole, I just stuck my clean hands right into the can and squished the ‘maters right up until they were “sauce worthy.”  Then added to the sauce pot…

Something about this was just wayyyyy too fun haha, call me weird 😉

In go the browned chicken sausages, fresh basil and Italian parsley, sprinking of dried oregano, salt and pepper and on goes the lid… let it simmer on low while you go get your workout on!

A quick Yoga Meltdown session later, walk into a fabulous smelling kitchen and uncover your surprise!

Oh yes, what could be easier? 

Perhaps boiling up some pasta to serve then shredding some TJs black pepper parmesan on top?!?!

Easy peasy, no?

And prepping a quick side salad w/ roasted red peppers, black olives, feta, fresh herbs and homemade white balsamic vinaigrette to go with…

This isn’t rocket science here 😉

Reasons why I loved this meal:

  1. It was delicious, tasted fresh & homemade which always ends a work day nicely.
  2. It was not labor intensive, preparing it before my workout meant that I was basically ready to eat once I was done.
  3. It wasn’t heavy on the meat, adding veggies to sauces like this is an easy way to really bulk them up in a healthful manner.

So there you have it!

Time for a pretty awesome line up of shows tonight, Monday night tv is probably my favorite tv night overall!

Now if only I could choose between The Bachelorette and 2.5 Men/Big Bang Theory… life decisions, right? 😉

Wild Mushroom Agnolotti

Happy Wednesday everyone!

Hope ya’ll are having a great mid-week day today 🙂

Work is going well and has definitely been a bit more quiet this week, which has been a change from the past 2 weeks for sure… but it won’t last long I know! (I’m okay with that, I like to be busy!)

Today I wanted to share with you a new-to-me food that I was offered the chance to try out at part of the Foodbuzz Tastemaker Program.

Buitoni Wild Mushroom Agnolotti

Half moon shaped pasta filled with portobello & cremini mushrooms, fresh roasted garlic and authentic Italian Grana Padano and parmesan cheeses.

Being the good girlfriend that I am 😉 I offered to cook these up real quick after dinner last night for The Man’s lunch today since I was taking the leftovers from dinner for mine…

But don’t you worry, I snuck in a taste during preparation to make sure they were “safe” for him and all 😛

Easy peasy.  Boil the pasta for 5 minutes, drain.

Melt 2 tblsp butter in a pan (I indulged for The Man, you could definitely use less) and a clove of chopped garlic for just a  few minutes…

Then just add the cooked pasta to the pan, letting swirl around in the butter lurve for a few minutes, topping with freshly grated Parm cheese… and voila!

I was pretty impressed with how fabulous these lil’ guys were with such little effort to prepare!!  I let The Man have a “sneak peak taste” too and he demanded more bc he really loved the dish.  I reminded him that there are only about 12 agnolotti in total so he would have to wait, or else starve tomorrow.

So with that being said, these are a bit pricey for the amount of food you get (both money wise and calorie wise), but they are great on taste which makes it worth it!  I could see buying these again every once in a while 🙂

Tonight we were planning to go see Billy Currington play but it’s an outdoor concert and the forecast looks like rain/storms so not quite sure how that will work out.

So it may be a workout and farmer’s market kinda night instead?!

Impromptu His & Her’s Dinner

Impromptu his & her’s dinner night!

We both got home a bit late from work and decided that it was a great night to take Lucy Dog for a walk around the hood – the rain is on its way O-U-T friends 😀

After that I wasn’t up for much cooking, plus The Man wasn’t up for much chewing since his mouf is still pretty sore.

So I looked to my freshly stocked fridge for some inspiration for me, and to the freezer for him!

What-da-know, some leftover frozen penne a’la vodka – which instantly came back to life with the addition of sausage patties & freshly grated Parm…

FOR HIM 😉

And for her?

All the makings of a fresh salad were within a vegetable drawer’s reach 🙂

Ginormous salad beast featuring:  spinach, tomato, cucumber, onion & Drew’s raspberry dressing (lurveeee)!

And remember those lentils I prepped for last night’s curry samosas?  Ahhh yes, those lentils.  Well there were leftovers and my mind got to work…

In went 3/4 cup cooked lentils, 1 small chopped onion, 1 chopped tomato & a handful of fresh spinach.

Of course I didn’t forget the spices?!  Curry powder, cumin, salt & pepper 🙂

All served up over some leftover mashed taters (w/ some accompanying Sriracha) 😛

So freaking good.  I am definitely Indian food obsessed, it’s official. 

Last night The Man commented “well I thought the Mexican food phase was gonna last longer, but it appears it has been overtaken for the time being” LOL.  Not to worry, plenty of fresh salsa & fiesta goodies coming to a summer near you – but for now, I’m loving me some Indian cuisine!

Alright, I have a hot date tonight so I better run… 😉

We’re almost to humpday, I’ll take it!

After my work function today I sat and read blogs for too long per usual bc I love all you fabulous peeps lounged for a bit then got right into one of my favorite workouts on ExerciseTV!

6 Round Slim Down.

More like 6 intervals that’ll kick yo’ a$$(!!!), this workout is freakin’ serious and challenges everything you’ve got.

Tangent:  I was having a brief discussion with a friend today about running and got me to thinking about how I really despise dislike it – and how that feels kinda “anti-blogger like“? 

Never one to conform, so honestly, I’m okay with that 😛  And if you know me well enough, you’ll know that it takes alot to keep me from getting bored  and therefore I really need a daily activity that is going to constantly challenge me both physically & mentally… which a mix-up of moves & intervals really does 🙂

What can I say, it does the trick for this gal, ooooo baby!

But to each their own, I have mad respect for all you runners out there 😀

So the Man had basketball tonight so that meant seperate dinner night in this house… well, in all honestly, I knew he’d want some major carbs/pasta & I was in the mood for something else but shhhh don’t tell 😉

For him:

Cooked up the pasta per directions, mixed with the vodka sauce & placed into a baking dish.  Topped with some extra grated cheese and all melted up gooey-like!

Happy bball camper 😛

For her:

Shrimp cocktail

Mixed veggies with melted cobly jack cheese

Simple. Deelish. And we are all happy 😀

Oh and look what I found when I got home today too….!

Lettuce seedlings!

Oh I am praying I don’t majorly fail at this garden thing.  Only time will tell though!

Guess it’s time for AI and some other quality tv (Millionaire Matchmaker?) 😉

I have been really busy with getting things done while I’m in the office today, so this is going to be a totally lame fly-by post (not gonna lie!)

Lunch eats consisted of leftover lean-green-cream-sauce-machine pasta eats!

And no, I didn’t bring this bowl to work haha, imposterrrrrrrrr!

Tonight’s plans include a fun & easy dinner out + maybe a movie 🙂

In other news, I ate my first “crispy/crunchy” food in quite some time last night… I was excited LOL.

“Cream?” sauce gone green!

Hey friends! 

Well happy to report that things are going better here on the homefront, throat is under control once again and I don’t feel like I want to curl up in bed… I’m thinking these are good things 😉

Andddddd I got the go ahead from my eye doc to wear my contacts again too whoop-eeeee!  I haven’t been able to wear them in almost a month, which has been uber-weird for me considering I never wear my glasses.  P.S. Don’t wear your contacts when you are sick, ever.  Lesson learned!

Oh check out this fabulous-delicious-wanted-to-eat-100-tons-of-it snack I had this afternoon too… holy yum why didn’t I do this sooner?

So before I get into my dinner adventure with the much-beloved tofu, I have to tell you guys about a lil’ sumthin sumthin first – kapeesh?

Alright, onto the dinner adventure!

I’m sure you friends know that you’ve never seen me eat/make/look at tofu haha.  Well, look who just may have an open mind tonight 😛

I purchased some random tofu last weekend on a whim, not knowing what the heck I had gotten myself into I did a bit of “research” on what to do with the stuff.

From what I learned, this silken tofu is best utilized in cream sauces and desserts – something that doesn’t need to hold it’s shape (learn something new everyday?)

So I concocted up a recipe idea in my head using these guys… it’s time for a “cream” sauce ladies & gents!

  • 1 small onion, chopped
  • 1 small clove garlic, minced
  • 1 small can mushrooms, drained
  • handful spinach
  • 1 tblsp (heaping) artichoke pesto
  • 1 package Mori Nu silken tofu
  • Parm cheese (unpic)
  • S&P (unpic)

First things first, saute the onions in some EVOO over medium until translucent (add water if they start to stick, best trick evah).  Then add the garlic for 1 minute then the mushrooms.  Plus S&P (we’ve reunited!)

Then it was time to play with the blender 🙂

Add the tofu, spinach and artichoke pesto and blend up until creamy, I added 1/3 cup H2O to help things out.  I gave it a taste and then did some baddddd… added the only Parm cheese we had in the house (cut me a break, The Man likes this stuff 😉 )

Oh and while I’m at it, this artichoke pesto is legit!  Picked it up at ohhhhh World Market the other day LOL 😛

 

Oh yea, dump this bad boy into the pan with the veg and get ready to start seein’ green!!

I made some “lasagna rags” as a serving mechanism for this green sauce of lurve… simply whole wheat lasagna noodles broken up into rugged pieces & boiled.  So fun! 🙂

Verdict?  Heck yea!  I really liked this ALOT.  I think some “better quality” Parm cheese would make it even that much better too 😛

And btw, this whole batch of “cream sauce” had about 390 calories… and makes 3 servings.  You do the math 😉  Oh yea, and a decent amount of protein I might add…!

So I have to say that tofu round #1 was a complete success, whoop whoop!
