DAY 3: Iguana friends & Mr. O’s ashes?

Alright blog friends, here we are at day three! 

This cookinfanatic (or shall we now say, cruisinfanatic 😉 ) woke up bright and early (this wasn’t easy folks ha) to get in a quick workout.  I seem to get a bit, shall we say, cranky if I don’t do something fairly active over the course of a few days!  So I did some brisk walking round the boat’s track until Mr. mopper man roped off a large section blocking my walking adventure grrr.  So up to the fitness room for some elliptical action and abs/arms J.M. style I went (I copied some of her moves from memory, that’s good stuff)… felt great!  After that it was time for a quick brekkie and then CoCo Cay Island for the day….

When we got there the sky was lookin’ a bit ominous, however the clouds opened up to a beautiful hot & sunny day!!  After grabbing a water bottle full of rum & tequila drink of the day “CoCo Loco” we set out to do some serious sunnin’ and relaxin’ before the lunch buffet (I see a pattern here)….

The water was spectacular with the exception of the many jellyfish making their home on our turf!  Yea, that’ll put a damper on a swimming plan.  But we gustered through it and luckily The Man & I stayed safe and sting free for the day 🙂

Lunch time rolled around and RCC had set up a nice buffet style bbq with some good eats – I got a small plate of a few goodies!

After lunchin’ we walked around the island a bit to realize that our ship had…duh duh duh duh….left us!!!!

Just kidding guys, seriously, I know that’s not funny (but kinda is right….) – The Man and I were all good and no, the ship didn’t leave anyone.  They don’t have a dock on the island so they have to ferry you back and forth from the ship.  Pretty sweet lookin’ though!  So we laid out for a while longer and enjoyed our afternoon, then decided to come back to the ship and finish up our day by the pool.  There we met a really nice couple with a very strange story – apparently the lady is a “guardian” and one of her client’s last wishes was to have his ashes sprinkled in the sea.  So Mr. O’s ashes were sent to sea by our new lady friend that very morning, from this very boat, and I thought this was a really interesting situation for a cruise activity, but who am I to judge?  So anyways, onto more uplifting things, we obviously had to have another snack before dinner and I made another serious salad beast (love the lingo Gina)

Then we took another of our infamous afternoon naps (life is rough) before gettin’ ready for dinner – sweet sweet sleep!  After some rest we classed it up at the Schooner Bar for some pre-dinner drinks.

After our cocktails we were off to our last dinner night of the cruise, and I finally get to show you guys our new cruise friends!  We had a great time with these guys, thanks RCC peeps for setting that 1 up perfectly!!  Of course, our group pic included our waiter & assistant waiter too, whoop whoop 🙂

Dinner was excellent, I started with the Antipasti (grilled veggies, roasted garlic, prosciutto, melon) & The Man began with the scallop risotto (yummm)… pretty much the majority of the table chose the tiger shrimp as their entree and that shrimp was not to disappoint – soo good!  Not to mention that our waiter de-shelled the butterflied shrimpies for us ladies 😉  super sweet service – that’s what I’m saying!

After stuffing ourselves at dinner, we headed to the Quest game show – those pics  of which will not be posted due to The Man potentially never forgiving me for life if so haha — let’s just say that is 1 funny onboard game show (some of ya’ll who’ve been know what I’m talkin bout!)  After the crazy game show time, we headed back to the room and called it a night w/ this guy:

😉  Alright bloggy bloggertons, there’s the scoop!  That was the trip in a nutshell… and we are stilllllll in the airport with a major delay due to serious storms all around.  No planes in or out of this place for now.  Needless to say, after 10 hours here (yea 10am) we are NOT happy campers.  But we are safe.  So that is what I keep focusing on.  I’m hoping we make it home tonight, they re-routed our incoming plane to Tampa and aren’t letting it here until the storms are gone.  So tonight could be a rough night for us, but take the good with the bad right.  We had a wonderful vacation, so I must stay focused on that.  Maybe the more expensive long flight w/ connections turned out to be a better choice in the end – lesson LEARNED 😦  On that note, let’s stay positive and hope to see you guys from Richmond tomorrow for a back to reality post!  Gonna go do some meal planning now (that’s a form of stress relief for this girl…!) – night to you all and enjoy the comforts of home for us!!

DAY 2: Crystal blue waters & watermelon sculptures….!

 

 Here we go day two, show us what ya got! 

The Man and I woke up bright and early and got out to the already packed pool deck early in the a.m.  We weren’t set to dock in Nassau til’ round noon so we figured that we’d make the most of the morning and get our tan on before debarking the ship!  Apparently the rest of the ship decided they would do that as well 😉

After a few hours at the pool we were nearing our destination, Nassau, Bahamas!!!  Check this out, our captain was a female – the ONLY female ship captain in the history of cruising.  Supersweet me thinks (yea ladies!)

Okay, so now back to reality…. The Man and I were super pumped to be in Nassau and ready to get this show on the road!  (you can see the Atlantis resort in the background of this pic).

So in lieu of an excursion with our RCC crew we decided to make our home for the remainder of the afternoon at this lil’ shanty (veteran cruise tricks….)

Had a few local beers, continued to get our tan/swim on, and then came the monsoon!!!  It rained cats & dogs, so we took our party inside to the straw market and I bought a lovely imposter coach wristlet (our pig towel will showcase that later) and we picked up a few other fancies.  After the storm passed, we headed back to the ship for some quick snack eats and a much needed nap.  After we got our beauty rest, we were ready to get dressed up for formal dinner night!
Insert funny:  The airport broadcast man just told us to “control our baggage” — just sounds pretty funny to me — I’m just sayin’

Dinner night 2 was superfab I must say, The Man and I both started with the lobster bisque and then I went for it like a real man and got the beef filet for din, he got the truffle mushroom linguine – both dishes were deeeeelish!!!  The beef was cooked to perfection might I add, got my carnivore on :/  For dessert I couldn’t resist some of the coconut cake – sue me 😉

After dinner, we hit up the Love & Marriage game show (ummm let’s just say I now know wayyyy too much about 3 particular couples on board!) and the comedian/magician act…. once those were ova it was time for our ship to part with Nassau – late night leavin’ right? – and of course it was time to EAT AGAIN!!  Pool side buffet & party, and this was no joke peeps – they were grilling, bbq’ing, dessert-ing and more… like woah.  It was fun though, great energy!

Well, not technically… we are currently sitting in the Orlando airport for the next 9 hours, but that’s another story grrr!  And since I am always soooo optimistic ;),  I figure it will give me ample time to post the cruise recaps so really I’m not thattttt upset over it!

So guys, we had an ammmayyyy-zing time on our long weekend cruise, it was everything we coulda wanted and then some – props to my peeps at RCC for makin’ that shiz happen!  And I’m warning you all now, we took a ridiculous amount of pics so I’m gonna try to not get outta control on the blog posting front but no promises from this girl…. !

Alright, here it is peeps, I thought it’d be best to break down the trip into each day (I’m a CPA, 1 to 1 ratio is where it’s at)  So that’s what’s up and here it goes…. (p.s. hope you guys had a rockin’ weekend too!!!)

So after a long night of travels, me and The Man got a good night’s sleep and were all nice & rested up for DAY ONE of our cruisin adventure 🙂

See ya Florida, off we go into the wide blue yonder!  So we finished up our pool deck departure festivities and went back to our closet stateroom to gussy up for our first dinner outing.  We had the late dinner seating and were hoping that they had put us at a table with the ‘cool kids’ (aka not with table guests that are completely awkward and make each meal brutally uncomfortable)….

Dinner was pretty good for night 1 (I will say that it got better as the trip progressed) and we had some great choices – I went on the Indian route and ordered the curry w/ yogurt/cucumber sauce (bling bling) and got some shrimpies for an app.  The Man was feelin’ the sea & chose the mahi tempura platter (blurry pic :/) and the onion soup for an app – and there is a sneak attack steak pic that made it’s way in there (thanks new table peeps!).  See the dinner montage below:

Guess dessert wasn’t too memorable this first night, or else I was too many glasses o’wine deep to remember the photo opp 😉  (JK…right)  But peeps, the coolest part of the night happened a lil’ before the stroke of midnight when they launched the space shuttle from Kennedy and we could see the ENTIRE THING from the boat deck!!!!  It was an absolutely spectacular experience, I have never seen anything like that – breathtaking *sigh*  We took a video, however I don’t have the video plug-in quite yet so sorry peeps, no post :/

Hey, where’d the pizza pic come from?  Yea yea yea… Sorrento’s pizza place of perfection… haha well not exactly but it was pretty good for cruise pie – note that The Man crushed almost half a pizza late night post-shuttle blast off.  Ladies & gents, that deserves a whoop whoop!  Alright guys, well day one was pretty much the shiz, and the trip only got better…. onto the next post in a few hours (we’re stillllllllll in Orlando for another 7.25 hours haha)…

Hello from a FL hotel!!

Hey guys, so you know since I can’t go a day without the internet I found this lovely hotel computer to write a quick postie!! (my laptop is not picking up signal anywhere grrr)  We made it to Florida finally and are just waking up after a late and stressful flight in… OMG guys, our initial flight was delayed about 40 minutes from Richmond, and keep in my mind that we only had a 45 minutes layover in ATL —- yea, that wasn’t going to happen and I really thought that a luggage disaster was going to strike!!!  However, being the first time that I have ever been excited about a delay, upon arrival in ATL we found out our next flight wasn’t til 11pm (delayed about 40 minutes) therefore our luggage made it with us and all was good!!! 🙂 🙂 🙂  Happy camper… didn’t get into Orlando til about 12:45am (whew) but all’s well that ends well!  We are leaving for the ship after a quick brekkie/shower/packup and then we are off to sea!  I promise next post will be tropical picture filled – and don’t you forgot those deelish cruise food pics (so pumped!)  I hope everyone has a fantastic friday and for real this time, see ya on Monday!!!!!!!!!!!

Hey bloggy bloggertons!!  Well, today is the day… time to get the heck outta Virginia and fly south to somewhere a bit more, shall we say, tropical.  How is everyone doing today?!  I hope well, since its TGIAF (thank God it’s almost friday 🙂 )  whoop whoop!  I am home a bit early from the workplace to tackle the remainder of the packing and then we are rushing off to the airport as soon as The Man gets home.  I am not sure what the internet situation will be for the next few days ( 😦 ) so just wanted to let you friends know that if I happen to go MIA until Monday you will know that it is either

  • (a) because I have not had internet access
  • (b) because I have been swept out to sea or
  • (c) because I have decided to up and move to a Bahamian island and abandon technology forever…..  😉 

But not to fret peeps, I know how to swim and love technology…. : P 

So anyways, I am so pumped to do a mega cruise recap for everyone when we get back (don’t leave me hangin’ peeps!)… expect to see lots of food pics + drink pics + tropical destination pics + FUN!!!!!!!!!!!!!!  🙂  I do hope that everyone has a fantastic weekend, and I will say that I am def going to go through some blogging withdrawals :/  It’s so funny how fast you get attached to this community and this concept – I am just loving it so far!

Oh my goodness, have I forgotten to give a lunch recap??  Scatterbrained Steph (SS for short) is at it again, sheesh.  Well here goes:  for lunch I decided to take a scorchin’ hot walk nice stroll to this awesome salad/sandwich/pizza/pasta place called Southern Railway – they have THE BEST salad bar and lots of other good stuff… Here’s a pic of downtown Richmond I took along the “stroll o’ heat stroke”

I got a mix of romaine, shrimp, feta, avocado, tomato, cucumbers, mushroom, avocado, roasted red peppers and slivered almonds – and what I thought was to be a bit of FF honey dijon however homeboy slathered my salad up soup style (grrrr) however I guess I will just have to make do!   Hey, how’d those stupid M&Ms make their way into my lunch bag (I mean seriously guys, this chocolate is following me, it’s NOT my fault hahaha!!)

Quick breather from packing/etc. to post tonight’s happnin’s & eats — whoop whoop for “use up watcha got” night!!!  As we speak I am enjoying a most delicious make-shift wheat wrap pizza w/ tons of fresh veggies – but you’ll just have to muddle through some nonsense here first to get to those pics!  : P   So after my scheduled meeting with J.M. (Jillian Michaels, in case ya’ll aren’t on a nickname/initials basis haha), I was feelin super awesome, J.M. always let’s me know what’s up and keeps me in check fo’ sho’

Packing was successful, well the clothing part, the massive quantity of toiletry products (who me?) have yet to be gathered  — there goes 15lbs in the shared suitcase hahaha… my biggest question is when did I get so high maintenance in the shampoo/lotion/etc area…. I mean wtf?!  So anyways, some things are just meant to be and accept this I have done.  Here are the 3 dinner dresses I decided to pack, the black one for our “formal” night onboard.

After all this shredding and posing and packing nonsense it was finally dinner time!  So I decided to work w/ the following ingredients – usin’ em up economical style…

 

Zucchini, tomatoes (cherry & red), wheat wraps, shredded mozz... and don't forget the red wine!!!

So I was estatic to not leave these to waste – and I mean, I woulda felt terrible leavin’ the wine guy behind, I mean seriously, priorities people 😉  And here was how it turned out (!!)

Ya’ll, this was for real good and I will definitely make it again for a quick dinner in a pinch…  sauteeing the veggies (including yellow cherry maters) first was the ticket… then I layered big red tomato slices on the wrap, topped with sauteed mixture (onion, yellow cherry maters, sliced zucchini, yellow bell pepper) and added the cheese.  Broil until the cheesy goes a’bubbly and you are in for 1 delish (and healthy what what) treat!!!  After the pizza love, I heard a noise coming from the freezer and realized that obviously this was the almost empty pure vanilla bean ice cream container lettin’ me know that it had to be finished as well ;), I mean, don’t leave a brotha out here….  In other dinner happnin’s, The Man is definitely not going to the store to get chocolate for us now, nope that’s sure not happening…. hahaha… only the 2 of us will ever know 😉

So for real bloggin’ peeps, anyone else have a good recipe that they just happened to stumble upon putting together while using up things in the fridge/cupboard?!

Well I better get to finishing up packing and cruise preparation…. we are leaving straight for the airport after work tomorrow and I am just praying that our flights go smoothly…. (fingers crossed!).  I plan on bringing the computer so that I can blog some recaps while at the airport (we have a crazy long wait on Monday 😦 ) but won’t be posting while out floating at sea…. don’t worry though, I will have plenty of fun recaps afterwards for ya’ll I am hoping!!! Wellllll, in other news, hump day is here!  Ladies & gents, let’s just say that is just like sweet music to this lady’s ears…..bc hump day this week = tomorrow departing for Florida and cruisin’ Friday (whoop whoop!)  Looks like Danny (Danny is NOT the man grrr) is now a tropical storm, but is headed for more of the middle-eastern coast… so it will most likely hit the Outer Banks, NC and the eastern VA shore (veryyyy close to home) while we are gone – still not great :(…… However it’s a good thing I have trusty super-Mom (!!) to watch our house and to take care of Lucy Dog – I am one lucky girl 😉

So a workday recap so far is exhilirating as usual (rightttt) – work/meeting/lunch & webcast/work – best part?  LUNCH.  Duh.  Packed eats included:  hummus/pepper/tomato wheat wrap, leftover beets, chips & MANGO SALSA (best Costco purchase eva!) + 3/4 hersheys bar (soooo addicted to this junk… must. stop. eating. badforyoumilkchocolateallthetime!  I think this is my worst eating habit, by far 😦 )

 Well tonight is going to be heavily focused on PACKINGGGGG!!  But not before me and this lady have one of our usual meetings 😉

Got a lotta cruise eatin’ to do and what better way to start a trip then making sure you fit some workouts in before you go, right?  I plan on trying to fit in some walking/gym time on the cruise as I usually do, however I am going to focus on gettin’ too upset if it doesn’t happen as much as I’d like (always tough….!) 🙂 

I also decided that tonight at the casa is going to be a “use up whatcha got” night on the dinner front – we have fresh tomatoes, turkey meat, cheese, zucchini, chilis and some other odds and ends that I would just feel wasteful leaving behind before our trip!   I’ll be back for a quick mid-packing post later!! 🙂

P.S.  How sad is it that not only am I uber-pumped for cruise food, but also thinking about groceries that I will need to buy upon return from vaca (we will be fresh out!)  — the dark chocolate/pb combo on Jenna’s site looks freaking awesome and I am hoping that they carry it in my area, as it is def on the “to buy” list for next week’s shopping trip oh my! Oh being a foodie, gotta love it.
